When it comes to cooking the Christmas dinner, we are all guilty of making waaay too much food. We worry that there won’t be enough, so we make collosal amounts, enough for a village and end up with loads of leftovers. Not sure what to do with them? 1. Boxing Day Brunch!

Use any roasted veggies to make a delicious frittata, just whisk eggs and add any cooked veggies you want, then fry before heating under the grill.

2. Bubble & Squeak

Another brunch classic, basically leftover vegetables mixed with mashed potato and fried.

3. Turkey, Brie and Cranberry Sandwiches

A firm festive favourite and super quick to make, perfect to keep you going through a boxset binge!

4. Turkey Stir Fry

A delicious dinner idea, throw together veggies, turkey strips and noodles in a wok with some soy and sweet chilli sauce.

5. Ham and cheese pastries

Got some leftover flaky pastry? Roll out and fill with ham and cheese before baking.

6. Cheesy Turkey Quesadilla


Layer turkey and sliced cheese in between two tortilla wraps and lightly fry until cheese is melted and tortillas are lightly toasted.

7. Veggie soup

Got loads of raw veggies left? Make a big batch of soup, perfect for unexpected guests too!

8. Turkey Curry

Mix together leftover turkey and vegetables along with a curry paste to make a yummy curry. Serve with potatoes instead of rice if you have lots leftover.

9. Cheese and Onion Tart

Use up what’s left of the cheeseboard and combine with onions to make a delicious tart.

10. Turkey Casserole

Combine turkey, vegetables and stock to make a lovely, hearty turkey casserole.

11. Veggie Pasta Bake


Mix leftover veggies with cooked pasta, pour over a jar of pasta sauce and bake for a filling lunch.

12. Macaroon

Got loads of mashed potatoes left? Mix with icing sugar and roll in desiccated coconut to make your own deliciously sweet Macaroon.
